Ingredients

Yogurt centers
  • 1 cup fresh strawberries 150 g, washed, dried, hulled and cut into 1/4-inch pieces
  • 0.75 cup plain whole-milk Greek yogurt 170 g; thick, with loose whey drained off
  • 2 tsp honey 14 g
  • 0.5 tsp vanilla extract
Chocolate coating
  • 5 oz semisweet chocolate 140 g, finely chopped
  • 1 tsp coconut oil 5 ml

Equipment

  • Baking tray small enough to fit flat in the freezer
  • Parchment paper
  • knife and cutting board
  • Clean kitchen towel or paper towels
  • Mixing bowl
  • Spoon or spatula
  • Measuring spoons and kitchen scale
  • Microwave-safe bowl
  • Microwave
  • 2 forks
  • Covered freezer container

Instructions

Freeze and coat
  1. Rinse the strawberries under cool running water, dry thoroughly, remove the caps and dice into 1/4-inch pieces. Line a tray that fits flat in the freezer with parchment.
  2. Stir the yogurt, honey and vanilla together in a bowl. Fold in the diced, dry strawberries until distributed without crushing them.
  3. Divide into 10 similar mounds on the lined tray, about 2 tablespoons each, leaving space between them. Freeze for at least 2 hours, until solid through the center; allow longer if needed.
  4. Put the chocolate and coconut oil in a clean, dry microwave-safe bowl. Heat at 50% power in 20-second bursts, stirring between each, until smooth. Stop heating as soon as the remaining pieces melt with stirring; keep water out of the bowl.
  5. Remove a few frozen clusters at a time. Using two forks, turn each in the melted chocolate, lift it out and let the excess drain briefly. Return to the parchment. Keep the remaining uncoated centers in the freezer while working.
  6. Freeze the coated clusters for about 10 minutes until the shell sets. Transfer to a covered freezer container, separating layers with parchment. Keep frozen at 0°F (-18°C) or below.
  7. To serve, take out the portions needed and let stand for about 3–5 minutes to soften slightly, adjusting for room temperature and cluster size. Keep the rest frozen.

Notes

Dry fruit and thick yogurt help the mounds hold their shape. Freezing time is an estimate; the centers must be solid before dipping. The coating quantity provides working depth, and some chocolate may remain in the bowl. Cost includes the full coating amount. Contains milk; check packaged chocolate for additional allergens. This is a frozen dessert, so keep stored portions frozen rather than leaving the batch on the table.
