Ingredients

Drink
  • 30 g fresh ginger peeled weight; wash before peeling
  • 0.25 cup fresh lemon juice 60 ml; wash lemons before cutting
  • 0.5 cup cold drinking water 120 ml, plus more in individual glasses to taste

Equipment

  • Blender with lid
  • Fine-mesh sieve
  • Measuring jug
  • Spoon
  • knife and cutting board
  • Citrus juicer
  • Three small glasses

Instructions

Blend and strain
  1. Wash the ginger and whole lemons under running water before peeling or cutting. Dry with a clean towel.
  2. Peel and chop enough ginger to measure 30 g. Juice the lemons and measure 1/4 cup (60 ml), removing seeds.
  3. Add the ginger, measured lemon juice and 1/2 cup (120 ml) water to a blender. Secure the lid and blend until the ginger is finely broken down, following your blender’s instructions.
  4. Set a fine-mesh sieve over a clean measuring jug. Pour in the mixture and press gently with a spoon to extract the liquid. Discard the fibrous pulp.
  5. Stir, divide among three small glasses and dilute individual servings with more water if desired. Strained yield varies. Serve promptly; this is untreated juice.

Notes

This is an untreated raw juice, not a pasteurized beverage. The FDA advises vulnerable groups to choose treated or pasteurized juice. Washing, acidity, refrigeration and freezing do not make raw juice pasteurized. Adjust strength to taste; no therapeutic dose or benefit is implied.
