Ingredients

Eggs and filling
  • 6 large eggs shells intact
  • 45 g mayonnaise about 3 tbsp; check the brand's weight
  • 10 g Dijon mustard about 2 tsp
  • 1 tsp apple cider vinegar 5 ml
  • 0.125 tsp fine salt 0.75 g, or to taste
  • 0.125 tsp black pepper about 0.25 g
  • 0.25 tsp paprika about 0.5 g, for dusting

Equipment

  • 1 Saucepan with lid large enough for 6 eggs in one layer
  • 1 Slotted spoon
  • 2 mixing bowls one large bowl for ice water, one for filling
  • 1 knife and cutting board
  • 1 Fork
  • Measuring spoons and kitchen scale
  • 1 Small spoon or a piping bag for filling

Instructions

Cook and fill
  1. Place the 6 eggs in one layer in a saucepan. Cover with cool water by 1 inch. Bring to a full boil, remove from the heat and cover. Leave for 12 minutes.
  2. Transfer the eggs to a bowl of ice water with a slotted spoon. Cool for 10 minutes, adding more ice if needed. Peel carefully, then halve lengthwise.
  3. Lift the yolks into a clean bowl without tearing the whites. Mash the yolks thoroughly with a fork until no large lumps remain.
  4. Stir in the mayonnaise, Dijon, vinegar, salt and pepper until smooth. Taste and adjust salt cautiously.
  5. Spoon or pipe the filling evenly into the 12 egg-white halves. Dust lightly with paprika.
  6. Cover and refrigerate at 40°F (4°C) or below until serving. For best quality, use within 2 days. Keep cold and discard if left at room temperature for more than 2 hours, or 1 hour above 90°F (32°C).

Notes

Contains eggs; check mayonnaise and mustard labels for other allergens. Timing can vary with egg size, starting temperature and elevation: the yolks must be fully set. A spoon works as well as a piping bag.
Video credit: Lisa Bryan of Downshiftology demonstrates classic deviled eggs. The creator starts the eggs in boiling water; this version starts them in cool water and uses its own measured Dijon-vinegar filling.
Nutrition is estimated per serving of 2 filled halves, using representative egg, mayonnaise and mustard data. Brands and the size of the eggs change the result.
