Chicken Shish Recipe With Lemon Yogurt and Charred Edges

Chicken shish recipe with grilled thigh pieces, red bell pepper and red onion on metal skewers.

A little char looks appetizing, but the center of the chicken matters too. This chicken shish recipe gives thigh pieces a lemony yogurt coating, with gaps between the chicken and vegetables so heat can reach them.

This chicken shish recipe makes eight skewers for four servings. Marinate chicken thighs in yogurt, lemon, garlic and pantry spices, then grill with red pepper and onion. Allow about 100 minutes, including an hour of refrigerated marinating, and confirm the chicken reaches 165°F / 74°C.

These are Turkish-inspired skewers with a tangy spice coating. I’d choose thighs for their rich flavor, keeping the yogurt layer light so it browns evenly.

Serving This Chicken Shish Recipe

Give the cooked skewers their short rest, then slide the chicken and vegetables onto plates. Metal handles stay hot, even when they look harmless. Use a clean serving platter and clean tongs rather than returning cooked chicken to the tray that held it raw.

  • Something fresh: a crisp cucumber or green salad gives the warm grilled pieces a cool contrast.
  • A bread option: split a small piece of baguette and fill it with chicken and vegetables for a simple sandwich.
  • A dip: serve fresh yogurt seasoned separately, keeping it entirely separate from the raw-chicken marinade.

I’d let the grilled pepper and onion do some of the work before adding sauces. Pepper offers sweetness, onion has softened edges, and the yogurt coating already brings tang.

Serve the skewers with one fresh element and any bread or grain you want. Keep the finished chicken on clean dishes, and let everyone choose how to build their plate.

Chicken Shish Recipe Variations

Keep the balance of chicken, coating and vegetables when making changes. Mild pantry spices make this version approachable, while the thermometer, rather than the marinade’s color, tells you whether the chicken is cooked.

ChoiceWhat changesWhat to watch
Chicken breastLeaner piecesCheck 165°F / 74°C and avoid overcooking
Sweet paprikaLess smoky flavorKeep the measured amount
Green bell pepperLess sweetnessUse similar-sized pieces
Longer preparation windowMore time in the marinadeKeep covered and refrigerated for 1–8 hours
Practical changes to the same skewer method.

A cooler grill area helps when the outside colors quickly. Move the skewers there and close the lid so the center can finish. Use tongs, and keep small gaps between the pieces.

I’d prioritize even pieces and controllable heat over dramatic grill marks. A small adjustment to the heat is a better fix than accepting a burnt coating or an undercooked center.

Health Benefits and Food Safety

Chicken supplies protein, and pepper and onion add vegetables. The yogurt contains milk, so this version does not suit someone avoiding that allergen. Choose sides and portions that make a satisfying meal for you.

Refrigerate leftovers within two hours, or one hour above 90°F / 32°C. Keep cooked chicken refrigerated for three to four days, and reheat thoroughly to 165°F / 74°C. Do not treat the marinade as a way to extend the life of older raw chicken.

Good handling belongs alongside good flavor: refrigerate the marinade, measure the chicken’s temperature and use clean serving tools. Those habits are more useful than judging doneness by grill marks.

Bottom Line

A satisfying chicken shish recipe needs a flavorful coating, even pieces and controllable heat. Lemon-yogurt marinade brings tang and spice, while pepper and onion add contrast. Marinate in the refrigerator, cook the chicken to the correct temperature and give it a short rest. The card below keeps the quantities and sequence together.

Ingredients

Chicken, marinade and vegetables
  • 600 g boneless skinless chicken thighs 3 cm pieces
  • 120 g plain whole-milk yogurt
  • 15 ml olive oil 1 tablespoon
  • 30 ml fresh lemon juice 2 tablespoons, measure after squeezing
  • 3 cloves garlic about 9 g, finely grated
  • 1 tsp ground cumin about 2 g
  • 1 tsp smoked paprika about 2 g
  • 1 tsp dried oregano about 1 g
  • 0.75 tsp fine salt about 4.5 g
  • 0.5 tsp ground black pepper about 1 g
  • 150 g red bell pepper 3 cm pieces
  • 120 g red onion chunked into separated thick petals

Equipment

  • Outdoor grill with cooler heat zone
  • 8 flat 12-inch metal skewers
  • Large nonreactive bowl and cover
  • Whisk
  • Knife and separate cutting boards
  • Measuring spoons and kitchen scale
  • Tongs and clean serving platter
  • Instant-read food thermometer

Instructions

Marinate
  1. Whisk the yogurt, olive oil, lemon juice, garlic, cumin, smoked paprika, oregano, salt and black pepper in a large nonreactive bowl until evenly combined.
  2. Add the chicken pieces and turn to coat evenly. Cover and refrigerate for at least 1 hour or up to 8 hours. Keep the chicken refrigerated while it marinates; do not leave it on the counter.
Thread and grill
  1. During the final 15 minutes of marinating, preheat a clean outdoor grill to medium-high, about 400–450°F / 200–230°C. Leave a cooler zone available by lowering or switching off one burner, or banking charcoal to one side.
  2. Divide the chicken, red pepper and red onion between eight flat 12-inch metal skewers, alternating the pieces and leaving small gaps. Let excess marinade drip back into the bowl. Discard the used marinade; do not serve it as a sauce.
  3. Grill for about 12–15 minutes, turning about every 3 minutes, until the chicken has golden edges and several of the thickest pieces reach 165°F / 74°C on a food thermometer. Insert the probe into the chicken without touching the hot metal skewer. Timing varies with the grill and piece size. If the outside browns too quickly, move the skewers to the cooler zone and close the lid until the chicken reaches the safe temperature.
  4. Use clean tongs to move the cooked skewers to a clean platter. Rest for 5 minutes before serving. Take care with hot metal handles and slide the chicken and vegetables off the skewers before eating.
