Fish tacos become much easier to organize when the oven handles the fish. These baked cod tacos pair gently spiced, flaky cod with cool lime slaw, creamy avocado, and a yogurt drizzle. You get the contrast of warm fish and crunchy vegetables without coating individual pieces in batter.

Bake the seasoned cod on a lined sheet pan, prepare the toppings while it cooks, and build the tacos just before serving. The recipe makes eight tacos: two per person for four servings.

I prefer a restrained sauce here. Cod has a mild flavor, and a thin ribbon of lime yogurt adds tang without turning every bite into a mouthful of dressing.

Serving Suggestions for Baked Cod Tacos

Set out the warmed tortillas, fish, slaw, avocado, and sauce separately, then let everyone assemble a pair of tacos. This keeps the cabbage crisp and gives the fish a chance to remain the main filling. Overfilling is tempting, but a taco should fold without requiring an engineering degree.

A side of beans or a simple salad can round out dinner. For a heartier plate, try a small air-fryer jacket potato alongside. For leftovers, store the cooked fish in the refrigerator promptly and use it within three days. Keep the slaw and yogurt sauce in separate covered containers. Refrigerate perishables within two hours, or within one hour when temperatures exceed 90°F.

  • Warm tortillas until flexible, then keep them covered in a clean towel.
  • Lift fish away from any juices on the baking sheet before adding it.
  • Drain excess liquid from the slaw and drizzle the sauce over the filling.

Assemble only what you will eat right away. Keeping each component separate protects the contrast between warm fish and crisp toppings.

Baked Cod Tacos Variations

Start with boneless cod fillets of similar thickness so they reach the safe cooking temperature at roughly the same time. If using frozen fish, thaw it in the refrigerator according to its package directions and pat it dry before seasoning. Excess surface water can collect on the pan and dampen the tortillas. Very thick cod loins may need longer than thin fillets, so start checking the thinner pieces first rather than waiting for every piece to look identical.

Paprika adds warm flavor and color, while cumin gives the seasoning an earthy note. The base recipe has no added chile heat. I’d put hot sauce on the table for anyone who wants it, rather than making the whole batch spicy.

  • Different crunch: use the same weight of green cabbage instead of purple.
  • Herb change: replace cilantro with flat-leaf parsley if you prefer its flavor.
  • Tortilla swap: use small flour tortillas; nutrition and allergens will change.
  • Different fish: haddock or pollock can work, but check each fillet for 145°F.

Change one topping or seasoning at a time, while keeping the fish amount, pan spacing, and safe cooking temperature consistent.

Health Benefits and Nutrition

Cod supplies protein, while cabbage, carrot, and avocado contribute fiber and a mix of nutrients. Corn tortillas provide the base, and the yogurt sauce adds some dairy protein. That combination makes a varied meal, but portion size, tortilla brand, added salt, and the amount of sauce all affect its nutrition.

Use a food thermometer to check the thickest part of the cod: safe seafood guidance recommends 145°F (63°C). A set timer helps with planning, but thickness determines when the fish is ready. Keep raw-fish utensils away from the ready-to-eat slaw.

Enjoy the balance of fish, vegetables, and tortillas, and use the nutrition estimate as a guide rather than an exact measurement.

Bottom Line

The strongest baked cod tacos keep their textures distinct: soft, seasoned fish; crisp slaw; flexible tortillas; and just enough creamy sauce. Prepare the cold toppings before the fish leaves the oven, check its temperature, then flake it into generous pieces rather than shredding it finely.

Build each taco shortly before eating. A little space in the tortilla makes the fish easier to taste and the taco easier to hold. The complete quantities and method below make four servings without leaving the toppings to guesswork.

Ingredients

Cod
  • 600 g boneless skinless cod fillets about 1⅓ lb; thawed, if frozen, and patted dry
  • 15 ml olive oil 1 tablespoon
  • 4 g smoked paprika 2 teaspoons
  • 2 g ground cumin 1 teaspoon
  • 2 g garlic powder ½ teaspoon
  • 3 g fine salt ½ teaspoon total: 2 g for fish and 1 g for slaw
  • 0.5 g black pepper ¼ teaspoon
  • 45 ml fresh lime juice 3 tablespoons total: 15 ml each for fish, slaw and sauce
Slaw and sauce
  • 200 g purple cabbage about 2½ cups, thinly shredded
  • 70 g carrot about ½ cup, coarsely grated
  • 15 g fresh cilantro roughly chopped
  • 120 g plain 2% Greek yogurt about ½ cup
  • 15 ml water 1 tablespoon, to thin sauce
Assembly
  • 8 small corn tortillas 6-inch; about 200 g total
  • 150 g avocado flesh about 1 medium avocado, sliced

Equipment

  • Rimmed baking sheet
  • Oven-safe parchment paper
  • Instant-read food thermometer
  • mixing bowls
  • Whisk and fork
  • knife and cutting board
  • Kitchen scale and measuring spoons
  • Citrus juicer
  • Dry skillet
  • Clean kitchen towel

Instructions

Bake and assemble
  1. Preheat the oven to 425°F (220°C). Line a rimmed baking sheet with parchment paper rated for that temperature.
  2. Place the dry cod fillets on the lined sheet with a little space between them. Rub with the olive oil, paprika, cumin, garlic powder, black pepper and 2 g of the salt. Spoon 15 ml of the lime juice over the fish.
  3. Bake for 12–16 minutes, checking early if the fillets are thin. Cook until the thickest part reaches 145°F (63°C) on an instant-read thermometer. The fish should be opaque and separate into flakes; thicker fillets may need longer.
  4. While the fish bakes, toss the cabbage, carrot and cilantro with 15 ml lime juice and the remaining 1 g salt in a clean bowl. Keep chilled until assembly, and drain excess liquid before serving.
  5. In a small clean bowl, whisk the yogurt with the remaining 15 ml lime juice and the water until smooth and spoonable. Keep chilled.
  6. Warm the tortillas in a dry skillet over medium heat for about 20–30 seconds per side, until flexible. Stack in a clean towel to keep warm.
  7. Use a clean fork to break the cooked cod into large flakes, leaving excess juices on the pan. Divide among the 8 tortillas, then add the slaw and avocado. Drizzle with the yogurt sauce and serve immediately.
